Chronic, Yellow Diarrhea

I am a post-stem cell transplant patient for multiple myeloma performed at the Mayo Clinic 13 months ago. After the ablation chemo and during the engraftment period, I experienced a virtual shutdown of my GI tract for over 21 days including esophageal strictures. I was on IV fluids and supplementation during that period. After that period, I developed projectile diarrhea after every eating or drinking event, often at times yellow. This persisted for 6 months and tapered-off to every other day. I have been able to isolate certain foods (anything green) or fatty foods (which I hardly ever eat). My diet has been reduced to primarily pasta, rice, potatoes and yellow vegetables. For over 30 years my meat intake has been restricted to primarily chicken, fish and ground turkey (which we use as a red meat substitute). I do drink fat free milk which is supplemented by acidophilus cultures. I have a bowel movement every time I urinate; however, most are soft but not runny. In March of this year I added a probiotic (3 different cultures) to my daily regimen and the diarrhea slowed down to one day per week (which is frequently projectile and sometimes yellow) until now. For the last 6 days I have reverted to the old symptomatology and have had daily attacks of yellow diarrhea and I recognize the fishy odour of small bowel shedding which occurred previously at Mayo's and during the immediate 6 months following the transplant. Neither my oncologist at the Mayo Clinic nor my oncologist at home seems concerned indicating that "it will take time to re-educate my GI tract." I have fecal incontinence and wear a pad and neuropathy (primarily peripheral) which I think may be affecting both my bowel and bladder sphincter muscles. I am developing social isolation given the unpredictability of the events and it is affecting my ability go to work. What to you advise?
